Why we prefer to sell our beef by the share:

Why we sell Beef by the Whole, Half, Quarter, & Eighth Share:

We usually harvest, pack, and ship our beef at the peak grass season, instead of shipping beef year-round like an industrial farm does who sends their cattle out West to finish on grain in crowded feedlots.

By mating together our harvest season with our peak grass growing season we can finish cattle well on grass without supplementing them with grain.

We are also a small family farm with a small team.  Selling our beef by the share allows us to serve customers and still have time to run the farm and produce the best beef we can. Selling by the piece, like a grocery store, means we to have to store, manage and continually be selling unsold beef. This is something a staff of 2 or 3 can not do, and also have a family life with kids, and have time to work cattle, something grocery stores do not have to do!

Selling by the share further means the whole cow gets honored by being totally utilized to feed families who share this value. Respect for our cattle and utilizing each completely is critically important to everyone here at Rabun Ranch. 

We have also found having a freezer full of all-natural beef also gives customers the peace of mind of having food security and give busy mothers flexibility with what they can cook for dinner.

Buying beef by the share also gives people a connection to their food and farmers.

How is our beef finished?

Hello, Local Beef Lovers,

At Rabun Ranch Beef, we take great pride in the quality of our finished livestock products. Our usual practice is to finish our livestock on grass, as it offers numerous benefits for the animal's well-being and the overall quality of the end product. However, we would like to bring a couple of exceptions to your attention:

1. Drought Years:

In certain circumstances, such as drought, grass availability is limited. During such periods, we adapt our approach and utilize alternative feeding methods to ensure the health and nutrition of our livestock. Please understand this is not like a commercial feedlot out West. The livestock is not confined. They have free-choice access to an all-natural feed and our pastures.

2. Customer Requests:

We understand that you, as our customer, may have specific preferences or requirements for finishing the livestock you purchase from us.  We will accommodate your request If you want a grain finish for your animals. Your satisfaction is our top priority. Remember to request your grain finish 2 - 3 months before you want your steer harvested.

Please rest assured that any deviations from our standard grass-finishing practice are made carefully considering factors such as animal welfare, your preferences, and the availability of alternative feed sources. We strive to maintain the highest quality standards in our finished livestock products while remaining flexible and responsive to our and your needs.

The Cuts Of Beef You will Receive:

All our shares from a One Eighth Beef Share to the Whole Beef Share have the same standard cuts. They only differ in the number of cuts you will receive.

Let me give you an example:

A 1/8 share box is our standard box for understanding an estimate of the cuts you will receive.

We learned we can divide and pack a whole steer into 8 separate 16x16x16 boxes, with the exact same content. The 1/8 beef share became our standard box.

If you want to order a 1/4 beef share we deliver you two 1/8 shares. If you want a 1/2 beef share, we deliver to you four 1/8 share boxers and so forth.

Below, Please find the Cuts found in our 1/8 Beef Share.

You can convert this to a 1/4 Beef Share by multiplying the number of cuts by 2, to a ½ share by multiplying by 4, and a 1/1 whole beef share by multiplying by 8. 

AT OUR FARM AN EIGHTH BEEF SHARE IS APPROXIMATELY 50 to 55 LBS. OF BEEF.

YOUR SHARE WILL INCLUDE:

24 LBS OF HAMBURGER,

2 Bone-in RIBEYE STEAKS,

2 Filets,

2 Bone-in NY Strips,

2 SIRLOIN STEAKS,

2 packs of short ribs

2 packs of Stew beef

2 Cube Steak Packs(E2ach pack contains 2 individual 1 lbs. pound cubed steaks.

2- ROAST

Even though we can guarantee you will receive between 50 lbs. To 52 lbs. Per EIGHTH BEEF SHARE, Please remember, cattle have individual maturity weights that vary. Due to this, the number of cuts an individual steer will provide will vary slightly, and the estimated number of cuts you will receive cannot be absolutely guaranteed.

The number of individual pieces of beef you receive is also affected by your cut sheet. If you prefer your steaks be cut thicker than our preferred 1 to 1.25 inch thickness, you will receive a fewer number of steaks, but you will receive the same poundage.

A final point. There are some items that cannot be divided evenly by eight and many people do not want these items anyway. Because of this fact, we have chosen to list items such as liver, bones, fallow, and like items separately on our product page so people who want these items as add-on purchases, may do so.

What size freezer will you need?

What size freezer will I need?

  • You want to make sure you have the freezer space to store your beef. A rule of thumb is that 1 cubic foot of freezer space is needed to store 30 to 35 pounds of beef.
  • 1/8 Beef Share: requires approx. 1.5 - 2.0 cubic ft. of freezer space. This will fit in a regular refrigerator-freezer compartment. It will take about half the space, which will leave room for other goods. No big freezer needed
  • 1/4 Beef Share: requires approx. 3.5 - 4.0 cubic ft. of freezer space. This will fit in a small chest or upright freezer.
  • 1/2 Beef Share: will require 7 to 8 cubic feet of freezer space.
  • Whole Beef: requires approx. 14 - 16 cubic ft. of freezer space. This will fit in a large chest/upright freezer.
